In our kitchen today, Jolene Ketzenber of Fishers’ Test Kitchen shares a SIMPLE chocolate cake recipe – no eggs, no butter! Her mother even called it “Wacky Cake!” After the delicacy, Jolene shares the latest restaurant news too!
Makes 9 pieces
1 ½ cups all-purpose flour
1 scant cup of sugar
1/3 cup unsweetened cocoa powder
1 teaspoon of baking powder
1 teaspoon cinnamon (optional)
½ teaspoon of salt
2 teaspoons of vanilla extract
1 tablespoon of vinegar
1/3 cup vegetable oil
1 cup of water (or use 1/2 cup of water plus 1/2 cup of cold coffee)
1/3 cup chocolate chips (optional)
Preheat the oven to 350 degrees. Lightly grease an 8 by 8 inch baking pan.
Whisk the flour, sugar, cocoa, baking powder, cinnamon and salt in a mixing bowl.
Add the oil, vinegar and vanilla to the dry ingredients; Pour water over everything and stir well with the fork until completely mixed. If using, stir in chocolate chips.
Pour the batter into the prepared pan and bake it for 30 to 40 minutes at 350 degrees or until the inserted toothpick comes out clean. After cooling, frost, sprinkle with powdered sugar or leave smooth.
